Biography
Catherine Peterson, RDN, PhD is a nutrition scientist and registered dietitian. Her expertise is in the role of micronutrients and other dietary factors in disease prevention. She is the Associate Director for Academic Affairs for the Division of Food, Nutrition, & Exercise Sciences in the College of Agriculture, Food, and Natural Resources and serves on several college and campus-level committees such as the Committee on Undergraduate Education and the Honors Curriculum Committee. Her current teaching reaches over 1000 students campus-wide every year, including the general education nonmajors’ regular and honors Introduction to Human Nutrition course (NEP 1034/1034H) and the nutrition majors’ regular and honors Human Nutrition I course (NEP 2340/2340H).
